If you have a passion for baking and dream of becoming a patisserie chef within the bustling hospitality and catering industry, this course is the perfect starting point. The Level 2 Certificate in Patisserie & Confectionery is a hands-on, skills-focused course that introduces you to the art of professional baking. You’ll have the opportunity to bake using our industrial-sized ovens and prepare a range of patisserie and confectionery items to be sold across the campus.

Our fully-equipped training kitchen adjoins an on-site restaurant that serves members of the local community. This means you’ll not only bake for real customers but also receive live feedback on your creations - an invaluable experience that brings your learning to life and prepares you for the demands of the industry.

What will I learn?

This course covers a wide range of topics designed to develop your practical skills and prepare you for a career in the industry. You will take part in hands-on sessions where you’ll learn to create a variety of sweet and baked goods. These include hot and cold desserts and puddings, biscuits, cakes and sponges, paste products such as choux and shortcrust pastry, as well as fermented dough products like artisan breads and enriched doughs. Throughout the course, you’ll build the confidence, creativity, and technical ability needed to thrive in a professional patisserie or bakery setting.

What will the course lead on to?

After successfully completing this course, you could progress into employment as a junior baker, confectioner, or pastry commis chef, or choose to continue your training through further education, such as a Level 3 qualification in patisserie or professional cookery.

Level 1 in English and maths or equivalent will be required for this course.

There may be some additional costs associated with this course, as you will need to purchase a chef uniform, along with knives and related equipment. More details will be provided upon application. You will also be asked to contribute to the cost of any trips. This can include visits to local and national restaurants, hotels, and industry outlets.
