What is the course about?

This short course is designed as a follow on from the introduction course. If you do have basic knowledge of making cakes and sponges and how to weigh out ingredients you are welcome to join this course.

You will learn how to work hygienically and safely in a professional kitchen using professional ovens to make various sponge cakes.

What will I learn?

On the course you will learn to:

  • Understand and work hygienically and safely in a professional kitchen, including using professional ovens
  • Weigh and mix ingredients to make a genoise sponge cake and gain confidence in adding different fillings
  • Develop skills for using vegetables in a cake and gain confidence in how to incorporate into recipes
  • Develop skills for making a red velvet cake
  • Use previous skills learnt, to create an Easter cake.

What are the entry requirements?

You must be over 19, have an interest in the subject area and be willing to partake in classroom activities and discussions and to self-assess your weekly progress using an individual learning plan at the end of each session.

Are there any additional costs associated with the course?

All the basics materials for the course are provided. We will ask you to bring some extra ingredients and some kitchen tools and equipment. The tutor will advise you after the first week on what to bring.
